    Qualification & Course Outcome

    City & Guilds London - Level 2 Diploma in Food Preparation and Cooking (Culinary Arts) (8065-02)

    This Course is accredited by City & Guilds London and awarded “Recognition of Quality Culinary Education” by the World Association of Chefs Societies (WACS).

    This intensive Vocational Education Training (VET) program of 620 hours of guided learning in Classical Continental Cuisine and industry-centered training is delivered by City & Guilds London certified trainers.

    The comprehensive and intensive training curriculum focuses on the development of Commercial Cookery – Food Production Skills, Product Creativity, Multitasking Abilities, Interpersonal Skills, Supervisory and Leadership Strengths required for the food industry, that help student chefs to seamlessly integrate, effectively deliver and excel.

    Work Placement

    The Industry exposure that is mandatory, provides Student Chefs with valuable ‘hands-on’ involvement in the industry working environment through the course & training. Work Experience Placement (WEP), which is optional, follows the 620 hours of training program and helps provide student chefs with actual experience of the industry by way of paid work experience and paves the way for further career opportunities.

    As a graduate from the International Centre for Culinary Arts, Dubai, one will be eligible for our Hospitality Jobs - Work Experience Placement (WEP) program. ICCA Dubai’s extensive network with the hospitality industry in the region and the Cruise Line Industry internationally provides students an opportunity to launch their career in the Hospitality, Restaurant and Cruise Line Industry Internationally.

    The Work Experience Placement follows the 620 hours of intensive on-campus guided learning and training. This program provides student chefs with valuable exposure in the industry working environment by way of a paid work experience placement.  Here the student chefs can apply their knowledge & skills gained in the training.  Such industrial work experiences help increase a student chef’s further skilled employment & other international opportunities.

    The hospitality job industry in Dubai is extensive, with the establishment of most leading international hotel chains and it also features some of the best luxury hotels in the world. The Food Industry is very competitive and highly discerning, with most international retail food concepts and specialty restaurants from the world over established here.

    ICCA Dubai WEP Program Selection Process & Salary Package Offered

    ICCA Dubai provides coordination & support for the first WEP Program on a ‘No Cost Basis’, for the Commis Chef (III, II or I) levels in the UAE / GCC Countries or as Asst. Cooks on leading international cruise lines.

    The WEP process and position are subject to the successful completion of the course program and the apptitute, attitude & the skills set demonstrated by the candidate at the placement interviews, trade tests and clearing the associated age, visa, statutory & medical conditions.

    Placement for the WEP Program is arranged by way of on-campus Interviews. The placement contracts are directly agreed to, between the candidates and the Human Resources (HR) Department of the respective employing companies.

    WEP for Advanced Diploma Program

    The Advanced Diploma Work Experience Placement (WEP) will be offered only to those students who have previously completed the Level 2 Diploma program from ICCA Dubai and the positions offered will be in line with the aptitude, attitude and skills set demonstrated by the candidate at the placement interviews.

    Selections for the said recruitment are conducted by the Human Resources / Authorised Recruitment Representative of the Cruise Line, based on the culinary skills, knowledge & aptitude demonstrated and meeting the medical requirements & cruise line country specific security risk assessment.

    The Diploma is available as a full time regular three (3) months program and also on a part time weekend basis and takes twelve (12) months to complete. 

    The student intakes for the full time regular program are held every six weeks. Refer to Program Start Dates

    The weekend program on Saturdays, runs in a cycle and admissions for the same are open through the year.    

    Classes are from 8.15am to 5pm, Saturday to Wednesday, Thursdays are half days and Friday is the weekly holiday.

    • Chef Daniel Hiltbrunner trained and worked in Switzerland.  He has also worked in the USA, New Zealand, Japan and Australia before relocating to the United Arab Emirates. 

      Chef Daniel’s work experience encompasses stand-alone fine dining restaurants, hotel openings with international hotel chains such as Hilton, Parkroyal, and Accor together with large scale production kitchens in Convention Centres.

      In Australia he was involved with training and mentoring young chefs and was amember of the cooking competition committee for the Australian Chef Association (ACF).  He was also a member of the Australian national culinary team for the 2008 Culinary Olympics in Erfurt, Germany.

      Chef Daniel is a certified Master Chef and certified WACS judge with extensive international judging experience.  He is a member of the Emirates Culinary Guild, the prestigious Academy Culinaire de France and La Chaine des Rotisseurs (CDR).  He is a jury member for CDR’s annual international young chef competition.

    • Chef Vinod Radhakrishnan is a qualified Chef Trainer with over 20 years of industry training experience.

      Graduated with a Diploma in Hotel Management & Catering Technology and a Bachelor's Degree in Hospitality in New Delhi and achieved his Masters Degree in Hospitality Management at WalesBridge University. Started his culinary career at the Hyatt New Delhi in 1995, continued to gain his experience and expertise in various countries within the Middle East. In 2006, he joined ICCA as one of its pioneer chef instructors. 

      Chef Vinod is an old school chef with a special passion for Italian Cuisine, an embodiment of patience with training, a true mentor for an aspiring chef. 

    • Chef Marco J. Morana is a professional chef with over 30 years of experience. His technical knowledge is outstanding and has a proven track record, having worked in Rosetted as well as Michelin star restaraunts both in Europe and in the USA.

      He has attended cookery school at the Roux Brother's, Raymond Blanc and Betty of Harrowgate. One of his key achievements, includes success in building the reputation and maximizing clientele of critically acclaimed "one of the best tapas restaurants in the UK". He has the "Midas touch" with turning around restaurants, with a passion and drive for cooking.

      Some of his other achievemetns include, being a long standing food stylist for Michelin star Spanish restaurant, Reeds. He has also been featured on Radio Scotland and some of UK's Food Channels.

    • Chef Lorraine Chivandre is an Assistant Chef Instructor, City & Guilds Compliance Officer, Fitness Nutrition Coach and Certified Personal Fitness Chef. 

      Prior becoming a certified chef, Lorraine was a Fitness and Nurtition Coach for the National Cricket Team of Zimbabwe. She then started her culinary career at the Fairmont the Palm in Dubai and worked together with various dining outlet including Flow Kitchen and Chef's Pallette. 

      Lorraine has joined ICCA on October 2015 as a Assistant Chef Instructor and the school's City & Guilds Compliance Officer

    • Chef Aziz Rajab is a professional chef who completed his training at the Escoffier Hotel School in Nairobi.

      He has not only achieved a tall order of success in his career as chef in the Hospitality Industry but also managed to touch the lives of keen learners as a Chef trainer.  His experience in the industry has led him to question and adapt to the evolutionary growth of the culinary world. His passion and drive towards acquiring precise skills and knowledge stems from his eager desire with all things food.

      Apart from having a multi faceted culinary understanding in various cuisines, French cuisine is his forte and can even whip up a feast in his sleep! He believes perfection is attainable and makes sure its at the heart of his cooking, leading him to have a sharp eye for detail. He was born to deliver under pressure as challenges only get the best out of him and he takes them on with sheer confidence and belief that food will guide him through to the finish line. The Kitchen is his home as his comfort with food transcends onto the plate.

    The Academic Faculty here is City & Guilds London certified trainers.     Gelato
    Programs - This program is designed for the aspiring Gelato entrepreneur who has no knowledge or experience in Gelato. The objective of these classes are, to teach the basic theoretical and practical concepts necessary to produce superior Gelato. Participants will acquire sufficient knowledge and confidence to enter the Gelato business.
     

    Innovative Gastronomy -
     This course is for those with a creative bent of mind, seeking to go beyond the ordinary using innovative technology to bring out flavors, textures and artistic presentations in food.
     

    Barista Training
    - This qualification provides learners with specialist skills and knowledge in one of the major growing areas of the hospitality industry – the beverage sector.     National Qualification Authority (NQA) UAE
       
    ICCA Dubai is registered with the National Qualification Authority (NQA) UAE.

    Upon successful completion of the prescribed guided learning hours and the internal theoretical and practical examinations at ICCA Dubai, a Certificate of Completion recognized by the Knowledge and Human Development Authority (KHDA), Ministry of Education, Government of Dubai, UAE, is issued for the Diploma & Amateur programs in Cookery & Patisserie and the Barista Business program.  

    Upon successful completion of City & Guilds International Examination held online at ICCA Dubai on completion of the course, the City & Guild IVQ qualification is awarded for the Diploma & Amateur programs in Cookery & Patisserie and the Barista Skills program.  

    PME Knightsbridge London Diplomas are awarded on completion of each Sugar Craft module.  On completion of all three modules a
    “Master Crafter Certificate” is awarded.
     

    Upon successful completion of each Gelato program, a certificate is awarded from the CARPIGIANI GELATO UNIVERSITY, Italy.  

    Upon successful completion of the Basic Food Safety course, the candidates are awarded Certificates of Completion, attested by the Dubai Municipality (DM), Government of Dubai, UAE. For all other Food Safety Courses, upon successful completion of the HABC Examination, HABC Certification - Internationally Recognized by Ofqual, DCELLS, CCEA and SQA, UK, is awarded.  

    ICCA Dubai Lifestyle Classes are hobby class and hence are not formally certified. A Letter of Participation is issued upon request.

    Work Experience Placement (WEP) follows the over 620 hours of intensive on-campus guided learning and training. The WEP program provides student chefs with valuable hands-on involvement in the industry working environment by way of a paid work experience and paves the way for further career opportunities.  

    The work experience placement program is not mandatory for the diploma qualification. The way of on-campus interviews arranges placement for the paid WEP Program.  The placement contracts are directly agreed to, between the candidates and the Human Resource (HR) Department of the respective employing company.  

    ICCA Dubai provides all coordination support for the first confirmed paid WEP Program on a ‘No Cost Basis,' at the Commis Hot Kitchen Chef/ Commis Pastry Chef (III, II or I) levels in the UAE / GCC Countries or on leading International Cruise Lines NCL, USA.

    Instalment plans are not available for overseas students (International Admissions).  

    For the Diploma and Amateur programs in Cookery & Patisserie, Installments are available to UAE Residents (UAE Admissions). All instalments must be secured by way of postdated cheques. Kindly enquire at the admission office for details.

    Yes, ICCA Dubai has procedures & policies and the same is made available at the time of admission.

    Dubai has a sub tropical and arid climate; sunny blue skies and high temperatures may be expected most of the year and rainfall is infrequent and irregular, falling mainly in the winter.  

    Temperatures range from a low of around 10˚ Celsius in winter to a high of 48˚ Celsius in the summer. The mean daily maximum is 24˚Celsius in January, rising to 42˚ Celsius in August.

    International Student Visas

    ICCA Dubai sponsors & provides all its International Students with the Dubai UAE Student Visa that are in line with the duration of the Course Program selected.

    These visas are made available as part of the International Student Package Offer and issued well in time before the course Start Dates.

    The processing of Visas are subject to submission of prescribed information and supporting documents, details of which are all provided as part of the Student Admission procedure.

    ICCA Dubai Student Accommodation

    ICCA Dubai has a full-fledged hostel facility for its International resident students, located in the heart of the city, near the famed Mall of the Emirates with all modern amenities and facilities, for a comfortable and homely stay. There are separate apartments for Ladies & Men.

    The hostel accommodation facilities are fully furnished, serviced, air-conditioned and on a sharing basis. Hostel accommodation facilities for International Student are arranged on request or as part of the International Student package offer.

    The School is located very close to the hostel facilities and is about 8 to 10 minutes away by the Dubai Metro.

    Airport Pick Up Services

    ICCA Dubai offers a free airport pick-up service for its international students who opt for hostel accommodation facility. The airport transfer operates from the Dubai International Airport Terminals 1, 2 & 3, to the student hostel accommodation facilities. Students are required to provide the Student Services Officer, with their flight details at least one week in advance.

    Who inspired you to cook?

    It has always been my hobby to cook and I have been passionate about food and they ways of of preparation ever since. I did some research about culinary schools in Dubai and found ICCA. 

    I first enrolled at their Lifestyle Classes till I decided to up my ante, and took the Cookery Diploma course. 

    What made you decide to choose ICCA?

    It offered short training time, convenient location, and there was an immediate response to my enquiry. Plus, they have industry standard equipments at school.

    Who inspired you to cook?

    My grandma was my inspiration to cook, she was always encouraged me. My coming to ICCA was dedicated to her memory. I cook for her. 

    What is your favourite experience in ICCA?

    Taste of Abu Dhabi was my favourite experience in ICCA. Meeting all the celebrity chefs, learning from them and getting to experience working for 12 hours straight can be fun if you really are passionate about what you do and love what you do.

    Who inspired you to cook?

    I would say, it would be two British chefs... Gordon Ramsay and Jaime Oliver

    What is your favourite experience in ICCA?

    My favorite experience in ICCA was Taste of Dubai, we got a chance to prepare the mis- en-place for the Miele Culinary Theatre, working 12 hours a day everyday, help out the audience while cooking together with the celebrity chef, and it gave us the chance to showcase our knowledge, talent and great bonding as we stay at the kitchen without much supervision. We took care of the kitchen as we were taught how and we owned it. Its a wonderful feeling being commended by the likes of Gary Rhodes and Aldo Zilli with our work at the kitchen.

    Winning 2 silver medals at the International Fine Food Festival was the highlight of my experience in ICCA!!

    Who inspired you to cook?

    Wolfgang puck and my Sicilian grandmother Dolly.

    What is your favourite experience in ICCA?

    As a student of ICCA Dubai, we were provided with opportunities to showcase our talent outside the school with events like Dubai Christmas Festival, joining international culinary competitions like International Fine Food Festival wherein I was able to win 2 silver medals and a bronze medal. And they also extend to ICCA graduates all the wonderful opportunity you get while you're enrolled in school, as an alum, they have asked me to work with them to represent Team ICCA at the Sharjah Expo: Taste of Ramadan. 

     Starting at ICCA was an inspiring as it made me understand and look at food in a different level. ICCA filled in all the gaps that I required to run my own restaurant, it taught me to work with the variety of ingredients and learned food safety and understand its importance in the culinary industry.

When I decided to study further, I did not think about my age as a constraint. The only thing in my mind was to pursue my dream and for me, this was only a part of a much bigger plan. For the senior aspiring students like me, all I have to say is take the very thought of being old from your mind, which is stopping you from planning your future. I would say keep doing and experiencing new things rather than thinking you are too old for anything new.
